They are called 'obulato' paper. They are used in Japan for making small edible containers to hold powdered medicine - diy pills. If you have a large japanese supermarket in your area, like mitsuwa, that will be the best bet. Look in the health and beauty section. Otherwise you will have to order from a japanese retailer online, which can be extremely difficult.

It is called wafer paper 0 grade 8"x11" 100 sheet in the package made in Holland, people using this to make
photo copy to put it on the cookies or cake. It's made from potato starch. The only problem of
this company is wholesale only and sell to who has re-sell #. You may need to work with
local retail store and have them order for you, it is inexpensive for 100 sheet.

Please take a look of this Madrid Fusion site, you can select the English site, it has Chef Grand Achatz's Lemon Soda picture and recipe.
The color of that wafer paper like this one but thicker. I send you some for you to test and let me know whether it will work or not.

Tel: 815-472-3100 You can call them up for samples. In CA I deal with Mercer, Modesto CA Tel 831-626-1323 they will send you samples.
When I send out your paper tomorrow, I will give you some sample of dry powder, remember freeze dried or spray dried both are strong concentrated, you need to taste
before you put in the package. Good luck!

Hmm, this is interesing; all recipes in the Alinea book are expressed in weight, never in volume. And I actually made this recipe last night (using 75g of oil) and it turned out pretty great; super-easy to do and very fast.
The 'potato starch paper' I found in a Japanese market in Berkeley near where I live; it was a pack of 50 small 'bags' for $5.

Hi there;
Yup, I realize the recipe isn't in the book; I was just noting that the book notes things in weight, and so was amicably and respectfully disagreeing that the soda recipe expressed oil in ml.
And admittedly I did not use freeze-dried lemon juice. I used Kool aid. I don't think this affects the question of grams vs ml though.
Cheers!

sorry if i came off a little harsh. however i have made this recipe (minus the lemon juice) and used the 75 grams of grapeseed oil. Like you said everything is in weight and i dont know why they would deviate for one recipe.
