Just finished PUSHED FOIE GRAS, Sauternes, Pear, Chervil from the cookbook. In the pear sorbet, I used a combination of guar gum and xanthan gum instead of STAB 2000. Turned out okay. But is there a better "homemade" combo for ice cream stabilizers?
