The profession of cooking in a 4 star restaurant requires great sacrifice, that includes all of one's would-be spare time. Work days are 15 hours long and demanding both physically and psychologically. The profession of cooking is notorious for destroying relationships, marriages and making it impossible to maintain a personal life. So, over the holidays we take a step back and regroup.
Alinea will be closed this upcoming week for 4 days so that the employees may visit their families, relax, and eat some turkey.
The staff at Alinea wishes the mosaic readers and fans a Happy Thanksgiving.

Excellent! The nature of the profession is exactly the reason I left it behind. I find people who stick with cooking professionally so inspiring/somewhat insane.
What a great thing to do for your employees. Will this be an annual thing? Thanks for posting about it!
Happy Thanksgiving!

does the restaurant have any other extended "breaks" throughout the year?
We will also close on December 21st and re-open New Years Eve.
