I can't find the molds to make butter spheres anywhere. JB Prince used to have them, but they were absurdly expensive ($75 for small mold). I've tried some alternate methods--molding by hand, making quenelles, using a round ice cube mold, using a round lollipop mold...all with varying levels of failure.
We ate there again a couple of weekends ago, and there were no butter balls to be had, which was disappointing because I had hoped to examine mine further. I only ever saw a butter sphere once, on the lobster dish.
Chef Beran made dessert on our table though, which was sweet and involved a lot of different spheres. I think I quizzed him on it a little, because I was a touch drunk on the wine service. Just a touch...

I bought a Fred cool jewel ice cube tray... it makes also nice presentations!
